Milk kefir is a delicious probiotic-packed drink produced with milk and kefir nodules. Simply by adding the milk kefir nodules in a jar to the milk, the fermentation process will take place, resulting in a rich, delicious and healthy milk kefir. You can take it either naturally or use it as another ingredient in your smoothies, shakes, ice cream, cakes, salads, cakes, cookies, pastries, puddings, crepes, etc. Milk kefir nodules can be reused over and over again, since they reproduce while fermenting our kefir.

The temperature of the environment greatly affects the intensity of fermentation. In the winter months it is recommended to ferment the kefir in a warmer environment (but not exposed to direct sun or other strong heat sources). For example, the warmest space in the house, or we can even wrap the glass with a blanket. For this reason the activation time of the granules can be extended to more than a week. In this case you have to insist more and change the milk more often as it says in the instructions.
When we find that the granules form a single piece, it is advisable to gently separate them by hand into smaller pieces; In this way the absorption of vitamins and minerals from the milk is optimized and its fermentation activity improves.
How to activate Kefir Granules?
- Pour a small amount of room temperature milk into a glass jar and add the dehydrated granules.
- Let ferment for 24 hours.
- Strain the granules and discard the milk (if the granules are small you may initially need to use a strainer finer than the slots on the built-in strainer).
- Wash the granules with warm water without chlorine and repeat the first step.
- Change the milk every 24 hours, until the kefir begins to ferment.
- Once you are happy with the kefir, use more milk for fermentation.
What type of milk to choose when activating Kefir granules?
To prepare milk Kefir you can use cow, goat, sheep or plant-based milk. However, it is recommended to choose fresh or pasteurized whole milk for activation.
How long does it take to reactivate Kefir granules?
The activation time depends on how long the grains were without food. It usually takes 7-14 days to activate milk kefir grains.
- When you decide to activate the kefir grains, place them in warm milk. Try to use the same milk that was used before (cow, sheep, goat). Change the milk every 24 hours and gently wash the grains with NON-chlorinated water when changing the milk. You can stop washing the grains after the third or fourth day.
- Keep changing the milk until the grains are activated, which is when they start producing kefir. This can happen very quickly, but can sometimes take up to 2 weeks if the grains were stored for a long time.
What to do if the kefir grains are small and do not grow at first?
Sometimes, if we notice that the kefir grains are small at first, we should not worry as they will begin to grow, other times they are just parts of the larger grains that separate. There is nothing wrong with small grains, as long as they produce good kefir. If you're worried about losing the grains, try straining them through a smaller plastic mesh strainer (we shouldn't use metal with kefir granules) until they grow.
Intake mode
- It is recommended to consume immediately after preparation.
- Place the kefir nodules in the glass container and add enough milk - up to the first ring to obtain approximately one serving and up to the second ring for two servings.
- Unscrew the clear lid slightly to allow air to circulate, which will aid fermentation. Let it sit at room temperature for about 24 hours. When the content becomes denser, we will have finished the first fermentation.
- After the first fermentation process, we recommend removing both lids and using the stirrer to gently mix the kefir, this will help to pour it more easily. You can also shake your Kefirko, but first, make sure to close both lids tightly.
- After you have mixed everything well, screw the strainer back on and you can now serve your kefir. The strainer lid is designed so that when pouring the kefir the nodules remain inside the container, thus separating them from the liquid part.
