Water Kefir is a delicious natural probiotic drink made with water, Kefir granules and sugar. It does not contain lactose, it is ideal for vegan and vegetarian diets.
Indication
To make Water Kefir all you need are live cultures - Water Kefir granules, also known as tibicos, tibi or sugar granules. The granules are made up of a series of cultures of various strains of bacteria and yeast, held together thanks to a matrix of polysaccharides created by the bacteria themselves. The culture feeds on glucose and produces lactic acid and carbon dioxide, thus creating a fizzy fermented drink with a very low amount of sugar.
Intake mode
It is recommended to use whole sugar or dehydrated fruits (dates, dried plums, dried figs, etc.), these provide the necessary nutrients to the fermentation and will give flavor to the kefir.
- Place the water kefir granules in the glass container and add fresh water up to the second ring.
- Add sugar and/or dried fruit. With the amount of tibicos that would occupy the entire space at the bottom of the strainer lid (with the transparent upper lid screwed on), you can prepare up to 0.6L of water kefir.
- Unscrew the top (transparent) lid of the container slightly to allow air to circulate properly, which will aid fermentation. Leave it like this, at room temperature, for about 24 hours.
- After the first fermentation process (more or less 48 hours) you can use the juicer accessory, attaching it to the strainer lid, to squeeze the juice of your favorite citrus fruit directly onto the water kefir.
- After adding the juice, it is the ideal time to serve the water kefir using the strainer lid screwed onto the container. This lid is designed so that when you gently pour the kefir, the granules stay inside the container, thus separating them from the water kefir you just prepared.
Storage conditions
Keep the granules as active as possible, if they are not fermenting, they can be stored in the fridge for 2 weeks. You simply have to store them in a solution of water with sugar and in the fridge.
