Cereal Gluten Wheat Bio from Biográ is a dried cereal that contains 92% vegetable protein. Widely used in bread making processes.
Indication
In baking, gluten is responsible for the fermentation gases being retained inside the dough, causing it to rise. After cooking, the coagulation of the gluten is responsible for the bread not deflating once it is cooked. In the kitchen, it is used to give consistency to food.
Intake mode
It is recommended to ingest to the taste of the consumer.
