Ma Vie Sans Gluten ORGANIC Guar Gum is a precious culinary aid, to bring binder and texture to your sauces and in your gluten-free pastries and breads.
It is advisable to use cold to instantly thicken a fruit coulis, a vegetable stock, a too liquid sauce, a vegetable pâté without cooking. Count 2% of the weight of your liquid to obtain a texture suitable for a topping. When hot, mixed with gluten-free flour, guar gum brings lightness and softness to all your gluten-free bakery and pastry preparations. 2% of the weight of flour is sufficient to obtain an airy crumb (1 g corresponds approximately to half a teaspoonful).
